Technical characteristics: This is a vineyard at the lowest altitude, at 180 meters. The climate is warmer and combined with the cool breezes of Vermion, which help to extend the ripening period, results in a wine with an intense aromatic character and at the same time high acidity. 20% is fermented with whole bunches. The wine is fermented with indigenous yeasts and matured for 12 months in second-use 500 liter French oak barrels.
Tasting: In appearance, it will impress you with its deep ruby color and its violet highlights. On the nose, it is a typical Xinomavro, as in addition to the aromatic characteristics of red fruits such as strawberry, raspberry, red cherry and red currant, aromas of tomato and red pepper are distinguished. Quite complex, floral and botanical, with aromas of violet, lavender, black tea and marjoram, as well as aromas acquired from its stay in the barrel, such as vanilla and cinnamon, but also cocoa that it acquires with aging. In the mouth it is full, with a rich mouth, ripe tannins and high acidity, flavors of red fruits, tomatoes and quite a botanical feel combined with flavors reminiscent of vanilla and cinnamon.
Pairs: Ideal with red meats, rib steaks, T-Bone, veal Bourguignon, peppered fillets, goat and lamb on the spit, cooked meats.
