Producer Description Winemaking for the Thymiopoulos family began in 2000, applying different cultivation tactics depending on the microclimate and the year and corresponding experimental winemakings, in order to determine the potential of each vine and the way it should be treated. In 2004, bottled wine from the privately owned winery was released for the first time. Aging takes place in oak barrels in the winery's underground cellar, while the fresh wine is left for almost 10 months with the lees.
